Zucchini Fritters

Ingredients:

  • 2 Zucchini
  • 2 Eggs
  • 1/2 cup of Chives
  • 1 cup of Plain Flour
  • 1 teaspoon baking powder
  • Salt

Instructions:

  • Wash the zucchini thoroughly under running water.
  • Grate zucchini using a food processor or box grater
  • Transfer to a large mixing bowl and add a teaspoon of salt
  • Wait for 10 minutes and then squeeze zucchini over the sink or through a cloth to release excess liquid, about 3 cups worth of liquid
  • Chop the green chives into small pieces
  • Mix the two eggs and then pour them with the chives into the bowl of zucchini and mix altogether
  • Add flour and baking powder into the mix and whisk everything together until it forms a batter
  • Warm 2 tablespoons of olive oil in a pan over medium to high heat
  • Add about 2-3 tablespoons of batter for each fritter into the pan and cook on both sides for around 3-5 minutes until golden brown and crispy
  • Serve the fritters on a plate, (if required, break the fritters up for easy eating with hands)

    Chef's tips:

    • Add a dollop of greek yoghurt or sour cream for dipping sauce
    • Refrigerate or freeze any leftover in an airtight container
