Zucchini Fritters
Ingredients:
- 2 Zucchini
- 2 Eggs
- 1/2 cup of Chives
- 1 cup of Plain Flour
- 1 teaspoon baking powder
- Salt

Instructions:
- Wash the zucchini thoroughly under running water.
- Grate zucchini using a food processor or box grater
- Transfer to a large mixing bowl and add a teaspoon of salt
- Wait for 10 minutes and then squeeze zucchini over the sink or through a cloth to release excess liquid, about 3 cups worth of liquid
- Chop the green chives into small pieces
- Mix the two eggs and then pour them with the chives into the bowl of zucchini and mix altogether
- Add flour and baking powder into the mix and whisk everything together until it forms a batter

- Warm 2 tablespoons of olive oil in a pan over medium to high heat
- Add about 2-3 tablespoons of batter for each fritter into the pan and cook on both sides for around 3-5 minutes until golden brown and crispy
- Serve the fritters on a plate, (if required, break the fritters up for easy eating with hands)

Chef's tips:
- Add a dollop of greek yoghurt or sour cream for dipping sauce
- Refrigerate or freeze any leftover in an airtight container
